Instructions:

A bean recipe for every taste:

1. cook adzuki beans in boiling hot water for 40 min until tender. Drain, rinse and cool. Cook bulgur in soup 10 min until absorbed.

Set aside.

2. Heat 1 tbsp oil in a pan and sauté onion, garlic and spices for 4-5 min.

3. place in a suitable bowl with the coriander, beans, spices and eggs and mash with a potato masher or fork. Add bread crumbs and bulgur. Stir until well blended. Cover and refrigerate for 1 hour until the mixture is firm.

For the tabbouleh, soak bulgur in 425 ml boiling hot water for 15 minutes. Mix with remaining ingredients. Cover and set aside to cool.

With wet hands, shape the mixture into 32 oval balls. 6.

Place on skewers, brush with oil and grill for 5-6 minutes until golden brown. Turn, brush repeatedly with oil and grill for 5-6 min.

Place on paper towels to drain. Garnish and bring to table with tabbouleh, black olives and pitta (bread pockets).

Traditional koftas are made with a spicy meat mixture. This variation made with beans and wheat is a delicious vegetarian alternative.
