Kohlrabi with Fried Goat Cheese

For kohlrabi with fried goat cheese, peel the kohlrabi and boil whole in salted water until tender, then let cool. Grate 1 tsp of the lemon zest and squeeze out the juice. Mix the lemon juice with the zest and a pinch of sugar.

Slice kohlrabi into thin slices and fan. Season with salt and pepper and drizzle with lemon juice mixture.

Cut goat cheese into slices about 3 inches thick. Dredge in flour, beaten eggs and bread crumbs like a cutlet. In a pan with olive oil, fry the cheese slices on both sides until golden brown.

Place the goat cheese on the marinated kohlrabi and drizzle with pumpkin seed oil. Wash the chives, cut into small rolls and garnish the kohlrabi with fried goat cheese.
