PREPARATION Preheat the oven to 200 °C. PREPARATIONFor the rack of lamb toast with shiitake mushrooms, season the rack of lamb with salt and pepper. Heat oil in a pan and sear the meat on all sides. Place in the preheated oven and roast for about 8 minutes until done (pink). Remove and keep warm for a few minutes wrapped in aluminum foil. Meanwhile, finely slice the onions and mushrooms and dice the mozzarella. Spread the onions, mushrooms and mozzarella on 2 slices of toast. Season with salt and pepper. Now place all 4 slices of toast on a baking tray covered with baking paper and toast in the oven. Cut the lamb into pieces and arrange them together with the halved cherry tomatoes and the slices of prosciutto on the toasted slices. Place on preheated plates. Cut the other two slices of toast in half diagonally and arrange on top.
