Instructions:

For the lasagna, first prepare the meat sauce. To do this, heat the oil, fry the chopped onions and crushed garlic. Add the tomatoes, stir and simmer gently for about 45 minutes, seasoning heartily.

For pasta dough, place flour on a work surface, remaining ingredients in the center, mix everything together and knead until dough is smooth. Continue to work into lasagna sheets.

In a large saucepan, bring salted water to a boil, add a dash of oil and cook pasta in batches for about 5 minutes. To cool, plunge into cold water with oil, shake off, lay out individually on countertop.

For the cheese sauce, heat butter, stir in flour, cook for 2-3 minutes, add milk until sauce thickens. Add mustard, pepper, salt and cheese, stop cooking.

For the yogurt sauce, mix all the ingredients together.

Grease the mold, layer meat sauce, cheese sauce, lasagna alternately in the mold, starting with meat sauce, finishing with lasagna sheets and spreading the yogurt sauce on top.

Bake the lasagna on the middle rack at 180 °C for about 45 minutes until a golden brown crust has formed.
