For the lavender parfait, boil lavender and lavender flowers with sugar and water and let cool. With this liquid, beat the yolks and sugar over steam until frothy, then beat until cold and finally carefully fold in the whipped cream. Pour into metal timbal molds or terrine molds and freeze.
