For the leek with pineapple and smoked sausage, cut the leek into rings and clean. Peel and chop the garlic clove. Remove the skin and stalk from the pineapple and cut into cubes.

Heat oil in a pan fry garlic and leeks. Add tomato paste, stir and add chicken stock and pineapple.

Simmer gently at moderate temperature for about 10 minutes. Season to taste with ketjap manis, salt and pepper. Thinly slice the smoked sausages and mix in.

Simmer gently again for about 5 minutes.

Shortly before serving, garnish the leek with pineapple and smoked sausage with finely chopped basil and whole leaves.
