A great cake recipe for any occasion:

Grease a baking tray (approx. 35 x 40 cm) and sprinkle with breadcrumbs.

Mix vanillin, fat, sugar, 1 pinch of salt and lemon zest with the whisk of a hand mixer until creamy. Fold in eggs one at a time. Combine baking powder, flour, cornstarch and almond kernels and fold in batches, alternating with 3 tbsp. juice of one lemon.

Spread the dough on the baking tray. Bake in a heated oven (electric oven: 200 °C /circulating air: 175 °C /gas: level 3) for 15-20 minutes.

For the icing, mix powdered sugar and about 5 tbsp juice of one lemon. Coat the cake with the icing on the spot. Decorate with lemon and orange zest and lemon balm if desired. Cool.

Kitchen oven is not on the spot Kitchen oven If cake browns too quickly when baked, cover with parchment paper to prevent burning. If there are still a few too dark spots after baking, you can easily rub them off with a plane. The rest will be covered by the icing.
