For the lemon casserole, preheat oven to 180°C.

Peel lemons, remove seeds and cut into cubes. Boil down with the preserving sugar, lemon zest and ginger for approx. 10-15 minutes and allow to cool thoroughly.

Blend the uncooled QimiQ until smooth and add the lemon juice, sugar and egg yolks with a mixer until frothy. Mix in the cooled lemons.

Mix together the flour and breadcrumbs.

Beat the egg whites with granulated sugar until stiff and fold into the QimiQ mixture alternately with the flour mixture.

Butter a baking dish (approx. 30×20 cm) and sprinkle with powdered sugar. Pour in the casserole mixture and bake in the preheated oven for approx. 40-45 minutes (cover with foil in between if necessary).

Serve the finished lemon casserole hot.
