Instructions:

First separate the eggs and beat the egg whites until stiff.

Squeeze the lemons and grate the zest.

Mix yolks, sugar, lemon zest and lemon juice until creamy.

Add flour, milk, oil and baking powder and mix well.

Carefully fold in the snow and fill the dough into ramekins.

Bake at 180 °C top/bottom heat for approx. 45 minutes.

Sprinkle the lemon muffins with powdered sugar as desired.
