Lentil Soup with Sacher Sausages

For the lentil soup with Sacher sausages, soak lentils in cold water overnight. The next day, chop bacon and onions into small cubes. Fry bacon in a pot, add onions and sauté until light. Strain lentils, stir in and pour in soup. Season with bay leaves, thyme and pepper and cook lentils until tender. Mix flour in a little water, stir in and thicken soup with it until creamy.

Season with vinegar and mustard, remove bay leaves. Blend with a hand blender and strain through a sieve. Add whipped cream and season with salt and pepper. Remove the skin from the Sacher sausages, cut into slices and heat in the soup.

Pour into warmed soup bowls and garnish with freshly chopped thyme.
