1 tsp. grated lemon peel -of 1 1 untreated en fruit juice of a er lemon mint leaves or possibly or the lilac – berry sprig eer branch to garnish.

Mix buttermilk, sugar and lemon peel. Boil rosemary, white wine, sage leaves, thyme and mint leaves, infuse for ten minutes, pour through a sieve, cool and add to buttermilk form. Solidify in the freezer, pushing together with a spatula until large ice crystals form (granites). Rinse elderberry, strip berries from stems with a fork, mash berries well, stir through with the juice of one lemon, port wine, sugar and star anise, stand and infuse juice for 30 min. Bring to a boil, infuse 30 min, then pour through a sieve. Mix cornstarch with two tablespoons of water, repeatedly bring juice to a boil and thicken with it. Cool while stirring. Peel pears, cut into wedges or cubes, mix with lilac berry sauce.

Serve grits well chilled on deep plates, spread granite evenly on top, garnish with mint leaves or possibly a sprig of elderberry.
