For the lime roast, wash the lemon, peel it thinly, cut the peel into small pieces and lard the roast with it.

Mix oil, mustard, lemon, pepper and salt to a marinade and roast together with the meat in a fireproof dish for about 30 minutes.

Remove the roast from the juice, keep warm. Mix cream with potato flour. Bind the juice with it and let it boil away well.

Put the lime roast back in, warm well, portion and serve.
