Squeeze the sausage out of the skin, mix with whipped cream and sherry until smooth. Pour into a piping bag with a large nozzle and pipe onto the bread slices. Leave to cool for 20 minutes.
Garnish with grapes, apple, nuts, pepper and herbs and arrange on a platter.
