The love letters are a simple but delicious cake recipe.

Put flour in baking bowl. Sprinkle sugar on top. Press an indentation in the center. Butter flakes egg, egg yolk and lemon zest into the bulge. Next, quickly knead everything together. Wrap the dough in plastic wrap and let rest for an hour.

Then roll out on a floured surface and cut out 24 squares (8 by 8 cm).

Mix the marzipan paste with the ground walnuts, rum and egg yolks. Put half a teaspoon of the mixture in the center of each square.

Now fold all corners together to form an envelope. Brush with beaten egg yolk mixed with whipped cream. Bake on a baking sheet lined with parchment paper for 15 minutes at 175°C degrees Celsius degrees.

In the meantime, knead the remaining marzipan paste with the fine sugar. Add a drop of red cake color and knead properly so that the color is well distributed. Cut out 24 small hearts from the marzipan mixture. Mix some fine sugar with a little bit of tap water to make a smooth icing. Coat the marzipan hearts with the icing and put them on the love letters. The love letters are a real delicacy.
