Instructions:

Warm the coconut milk a little, dissolve the sugar in it and mix with the chia seeds. Leave to swell in the icebox for at least 1 hour (can also be left overnight!).

Wash the lime, grate the peel and squeeze out the juice. Peel and seed the mango and puree the flesh together with the lime zest and juice.

Pour coconut-chia pudding into glasses, pour mango puree on top, decorate as desired and serve.
