Instructions:

For the mango malibu slice, prepare the base. Separate the eggs and beat the egg whites until stiff. Beat the yolks, sugar and oil until foamy, slowly stir in the water and lemon juice. Fold in stiffly beaten snow, flour and baking powder. Spread on a baking tray and bake at 160° hot air until golden brown.

For the cream, mix curd, yogurt and sugar with a mixer until smooth, soak gelatine in cold water and squeeze out. Heat with lemon juice and 100 ml water until dissolved and quickly mix with the curd yogurt cream. Cut 1/2 mango into cubes and fold into the mixture as well. Spread the cream on the base.

For the mango jelly, dice 1 1/2 mangoes, boil down with the mango juice and puree. Stir in Malibu and cornstarch as well and bring to a boil again. Allow to cool slightly and smooth over the cream. Refrigerate the mango malibu slice overnight.
