Marinated Calf’s Liver

Instructions:

Have your butcher remove the veins and outer skin of the liver, then soak the slices in salted water for 30 minutes and then dry the surface with a dishcloth or possibly a paper napkin.

Next, sprinkle the liver pieces on both sides with monosodium glutamate. Each slice of liver goes between two strips of bacon. Next, roll everything together and secure the roll by skewering.

In the meantime, you have mixed well all the ingredients of the marinade. Into this go the “roulades”, and everything together goes into the refrigerator for two to three hours. Do not forget to turn your “roulades” two or three times during this time to the other side!

Only now form the portions on medium-hot embers. Grill them on each side, but turn them only once. In total they stay on the broiler for about 15 min.

Preparation : 2-3 hours marinating time

Our tip: use a deliciously spicy bacon for a delicious touch!
