Instructions:

To make the marzipan cake, first butter a cake pan and sprinkle with flour. Roughly grate the raw marzipan paste and dissolve it in the orange juice by stirring with a hand mixer.

Separate the eggs. Preheat oven to 150 °C (top/bottom heat).

Add orange zest, cinnamon and softened butter to the marzipan-orange juice mixture and beat with a hand mixer until fluffy. Slowly beat in the egg yolks a little at a time.

Beat egg whites with fine crystal sugar and salt until stiff and fold in.

Sift Fini’s Feinstes flour and baking powder and fold in.

Pour the mixture into the prepared baking pan and bake in the preheated oven on the lowest rack for about 1 hour (test with a stick). Let cool briefly in the pan, then turn out of the pan.

For the icing, sift the powdered sugar and stir with the lemon juice until smooth. Then coat the marzipan cake with it.
