A simple but delicious cake recipe:

Mix the sugar and eggs until thick and creamy, add the flavoring and mix well. Then sift the flour, mix with the baking powder and add to the batter form. When the whole is well mixed, fold in the mascarpone. Finally, add the almond kernels, ginger and raw cranberries. They do not need to be cooked beforehand, otherwise they will become too soft while baking. Stir everything heartily, because the dough is very heavy.

The amount then in a greased loaf pan (about 30-40 cm long) form and bake for an hour at 180 degrees in a convection oven. Before serving, decorate with dabs of cream, some cranberries and mint leaves.

Tip: The cake tastes just as good with cream cheese and instead of cranberries you can also use sour cherries or possibly currants.
