Melanzane with Minced Pork

Instructions:

Chop the pork into small pieces.

Cut the melanzane lengthwise into finger-width strips. Fry in hot oil in batches for 2 minutes.

From the frying oil add 2 tbsp. in the wok, the sesame oil, add the ginger, garlic as well as the spring onions. Fry the course, stirring well.

Add the pork mince and fry until crumbly.

Add yellow beans, chili bean salt, paste, sugar, pepper, soy sauce and vinegar. Mix maizena (cornstarch) in water and add as well.

Saute on low heat for about 20 minutes, perhaps adding a little water now and then to prevent sticking.
