For the Melon-Mozzarella-Prosciutto Skewers, cut the melon in half, remove the seeds and cut out small balls with a Parisienne spoon or cut into cubes. Cut out balls of the mozzarella.

Cut the prosciutto slices in half lengthwise and fold or roll up into small “parcels”. Pluck the basil leaves, wash carefully and pat dry.

On small skewers, skewer a melon ball, a piece of prosciutto, one or two basil leaves and a scoop of mozzarella. Insert the skewers the hollowed half melon.
