A simple but delicious cake recipe:

Elderflower mousse: season elderflower syrup with juice of one lemon and sparkling wine. Soak the gelatin in cold water, squeeze it out and let it melt in the slightly warmed elderberry juice. Chill until the mixture begins to gelatinize slightly. Whip egg whites with sugar until stiff and fold into the gelling mixture together with the whipped cream. Pour into deep plates and set aside to cool.

Melon soup: Cut out a few balls from the melon and crush the rest with a hand mixer. Season with orange or possibly passion fruit juice. Finally, add a dash of Moscato to round it out.

Dip elderflowers in pancake batter and bake in clarified butter until done.
