For the men’s mushroom lasagna, first prepare the spelt dough and let it rest.

Then roll out and cut the dough into sheets or run through the pasta machine. Blanch briefly in salted water.

Cut the mushrooms into cubes and fry them quickly. Collect the escaping mushroom water in a separate bowl.

Salt and pepper the mushrooms. Mix with chopped thyme and garlic. Stir in the mascarpone and grated parmesan.

For the bechamel sauce, melt butter. Add flour and stir until lightly browned. Then stir with the collected mushroom water.

If there is not enough liquid, add some more milk. Season with salt, pepper and nutmeg. Grease the baking pan well with butter and line it with pastry sheets.

Spread the mushroom mixture and pour the béchamel sauce over it. Put dough sheets as the next layer until the mold is full.

Finally, sprinkle the mushroom lasagna with Parmesan cheese and spread butter flakes on top. Bake in the oven at 220° for 20 minutes until the cheese is nicely browned.
