Sauté diced onion in 2 tbsp oil until translucent. Add bay leaf, sage strips and long grain rice and sauté, turning, until long grain rice is translucent. Season with salt and pepper. Extinguish with vegetable stock and 200ml water, simmer on low heat for about 20 minutes. Cut broccoli into roses, simmer in salted water for approx. 12 minutes. Drain broccoli. Clean mushrooms and cut into slices. Toss briefly in remaining oil. Stir broccoli, fat, mushrooms and cheese into risotto. Serve and garnish.
