For the millet flummery, soak the gelatin in cold water, then squeeze well. Rinse the orange under hot water, rub dry, finely grate the peel and squeeze out the juice. Slit the vanilla pod lengthwise and scrape out the pulp. Wash the nectarines and cut into small pieces, removing the pit.

Bring the milk with orange zest and vanilla pulp to a boil in a saucepan. Stir in the millet. Simmer for 3 minutes.

Heat 2 tablespoons of whipped cream and dissolve the squeezed gelatine in it. Whip remaining cream until stiff. Stir the liquid gelatine and some orange juice into the millet milk, then fold in the whipped cream. Finally, mix in the nectarine pieces and fill the flummery into bowls. Allow the millet flummery to set in the refrigerator for at least 3 hours.
