For the minced meat, peel the potatoes, cut into equal cubes, mix with a little oil and fry in the oven until crispy, add salt.

Meanwhile, finely dice the onion and fry it with the mince in oil or clarified butter. Add thyme and garlic, fry briefly. Season with salt, bell pepper, paprika and mustard.

Stir in crème fraîche and chopped parsley. Finally, mix with the diced potatoes. Serve with salad.
