Mix the mince with the breadcrumbs and onion in a bowl and season with salt and pepper. Grease a cassette roll with butter and fill it with half of the mixture. Spread the quartered carrots, eggs and gherkins evenly over the mixture, leaving a 2 cm border. Cover with the rest of the mixture and bake at 200 degrees for about 1 hour. Pour soup regularly.
