Pasta dishes are just always delicious!

Chop the onion, crush the garlic. Sauté both together with the parsley in hot oil until soft. Add the cleaned, chopped vegetables, the tomatoes with their juice, the tomato paste and about a quarter of a liter of water. Season with salt and pepper and simmer at low temperature for 30 minutes. Halfway through cooking, add the pasta and thyme.

Season the minestrone again and add grated Parmesan cheese to taste.
