For the minestrone with vegetables, clean and dice the spring onion. Finely chop garlic, wash, clean and chop celery. Wash, peel and dice the carrot. Wash, quarter, seed and dice tomato as well. Drain and rinse beans.

Sauté onion, garlic and carrots in olive oil, add vegetable soup and simmer for 10 minutes.

Add celery, beans and herbs and cook for another 10 minutes.

Just before the end of cooking time, add peas and tomatoes. Season the minestrone with salt and pepper.

Serve the minestrone with vegetables hot and refine with finely grated Parmesan cheese.
