Brush a muffin baking tray with oil. Line each cavity with 3 filo pastry squares.

Sauté lamb mince in hot olive oil, add diced shallots and garlic and sauté. Season everything with salt and pepper. Stir in freshly chopped kitchen herbs and then cool everything together.

In the meantime, mix eggs, whipped cream and clear soup, season heartily with salt and chili. 4. Distribute the roasted lamb mince evenly in the ramekins, pour the glaze over it and place feta pieces on top. Bake in the heated oven at 200 °C for about 20 min. on the lowest rack. Serve immediately.
