Instructions:

For the dumpling dough: Mix all ingredients to a smooth dough. Form the dumpling dough on a board and cut small dumplings into the boiling salted water with a kitchen knife. For the sauce: Sauté the diced garlic and finely chopped shallots in olive oil until translucent, then add the cuttlefish cut into strips. Extinguish with white wine, add a little soup and cream. Reduce everything briefly. Season with salt, pepper, herbs, nutmeg, cayenne pepper and lime juice. Gnoccetti to the squid form.

For the leaf salad: chop red cabbage. Grate carrots. Mix herb vinegar with a little honey and olive oil, marinate the leaf salad with it.

Arrange mint gnoccetti with squid on plates. Serve the lettuce separately.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also stand out for their fresh taste!
