For the mint raita, wash the mint and pat dry, pluck the leaves. Peel and quarter the garlic. Puree mint with lime juice, garlic and cumin in a blender.

Mix with remaining yogurt and season with salt and pepper. Leave to infuse in the refrigerator for at least 1 hour and serve the mint raita chilled.
