Cut melon in half, remove the seeds. Cut both melon halves into thirds, remove the peel and cut each piece into fans. Drizzle the fruit fans with the sherry. Steep for about 1 hour with the lid closed.

Chop the mint. Mix with double cream and sugar. Arrange melon fans on plates. Pour a dollop of double cream on each and decorate with mint leaves and strawberries as desired.
