Instructions:

First separate eggs into egg whites and egg yolks. Cream butter, mix well with cream and egg yolks. Beat the egg whites with a pinch of salt until stiff and fold into the yolk mixture alternately with the flour. Butter a baking tray well or line with baking paper and spread the dough on it as for a sponge cake roulade. Bake in a well preheated oven at 180 °C for 8 to 12 minutes until golden brown. In the meantime, prepare the filling by mincing the ham, heating the butter in a pan and slowly heating the ham mixture together with the herbs. Now turn the finished roulade out onto a kitchen towel or a lightly floured work surface, spread with the slightly overcooled ham filling and roll up gently. Allow to cool and serve sliced.
