Cut the mozzarella into thin slices. Cut the bread slices in half.

Cover 4 bread slices with cheese and optionally add dried anchovy fillets or tomatoes. Sprinkle with pepper, maybe a tiny bit of salt and oregano. Lightly moisten the edges of the remaining bread slices and press firmly onto the mozzarella bread. Mix eggs with milk and spices and pour into a deep dish. Dust the breads with flour and place them in the egg milk until they are soaked. Next, toast in olive oil on both sides in a non-stick frying pan until golden brown. Drain on paper towels and bring to the table.
