For the mulled wine cake, beat the eggs and separate them. Beat the egg yolks with the butter, sugar and spices until foamy. Pour in the mulled wine and mix in. Sift flour and baking powder and fold in, as well as the firm beaten egg whites. Line a cake tin with baking paper and pour in the mixture.

Bake the cake at 180 degrees Celsius for about 60 to 65 minutes and then let it cool.

Prepare pudding powder according to package instructions, but with mulled wine instead of milk. Whip the cream with vanilla sugar until stiff. Prepare gelatin according to package directions and mix with pudding mixture. Allow to semi-gellify and then fold in the whipped cream.

Cut the cooled cake base in two horizontally. Spread the cream on the first layer, spread another layer of pastry, another layer of cream and finish with a layer of pastry. Chill in the refrigerator for a few hours so that the cream becomes firm.

Before serving, sprinkle the mulled wine cake with powdered sugar.
