For the mushroom risotto, sauté the onions in oil, add the rice and stir until it is translucent.

Gradually pour in beef broth and cook the rice over low heat.

Cut the mushrooms into slices, fry them in a little oil and add them to the rice. Enjoy the finished mushroom risotto hot with freshly grated Parmesan cheese and some cress.
