Grease a cake mold with oil. Cut the puff pastry sheets to the size of the mold and brush them individually with hot oil. In a baking bowl, mix the ground walnuts with sugar, the grapes and a grated lemon peel. Start by placing 3 pastry sheets in the pan, then alternate layers of filling and three pastry sheets. Cover with 3 pastry sheets at the end.

Cut the cake into triangles directly in the mold: To do this, first dip a knife in hot oil. Bake the pita in the oven at 210 °C (gas mark 6) for 45 minutes. 10 minutes before the end of the cooking time, add sugar to a saucepan with water, one or two slices of lemon and a vanilla pod cut in half lengthwise. Cook for 5 to 6 min. to make a thick syrup. Remove pita from stove, baste with sirop and place in lukewarm oven for 15 min.

Remove from the heat again and carefully remove the slices from the mold with the pie lifter. Rest on a kitchen rack for 1 to 2 days.

These deliciously sweet cakes keep well.
