For the nut roulade made with wholemeal spelt flour, first separate the eggs. Beat the egg whites with the granulated sugar until stiff. Mix egg yolks, vanilla sugar and powdered sugar until foamy. Mix in grated walnuts and rum.

Alternately mix in flour and beaten egg whites. Place baking paper on a baking tray and spread the sponge mixture on it. Bake at 180 °C for about 10 minutes.

While still hot, spread with blackberry jam and roll up.
