Instructions:

Chop the meat, cucumber, radishes and eggs into small pieces. (The name okroshka comes from the Russian verb okroshit’ – to chop). Chop the spring onions and mix them with a little bit of salt until they draw juice. Add onions and eggs together with mustard and sugar to the sour whipped cream form and mix well. Dilute with kvass. Add chopped meat, cucumber and radish to the mixture. Season to taste. Serve with ice cubes and finely chopped spring onions.
