Instructions:

For the orange-carrot-chicory salad with shrimp, first mix all ingredients for the dressing.

Pluck lettuce into coarse pieces, wash well and pat dry, crumble feta. Peel carrots and cut lengthwise into thin strips. Peel the oranges and cut them into small pieces.

Put a baking tray in the oven and heat at 200 °C for about 10 minutes, put the shrimps on the hot baking tray, mix with the olive oil and roast for 2-3 minutes more. Remove from the oven and season with lemon juice, salt and pepper.

Put the dressing in a bowl, add the lettuce and mix well with the rest of the ingredients.

Arrange the orange-carrot-chicory salad with shrimp and serve sprinkled with cress.
