Finely grate the cucumbers on a vegetable grater or cut them into very small pieces with a vegetable slicer. Sprinkle with salt, let stand, squeeze and pour away the liquid.

Add the peeled, crushed or possibly pressed garlic, yogurt and vinegar and mix well.

Sprinkle with paprika if desired and garnish with olives.
