Orzo with Feta and Tomatoes

Try this delicious pasta dish:

200 g cherry tomatoes

125 g feta cheese

1 1/2 tablespoons red wine vinegar,salt, pepper

Fill a 4-liter pasta pot three-quarters full with salted water and bring to a boil.

Toast pine nuts in a small heavy skillet with 1/2 tbsp olive oil over medium heat until they begin to color. Drain on paper towels.

Crush garlic, chop parsley (not too finely]. Quarter tomatoes, coarsely crumble feta cheese. Stir vinegar, garlic, parsley, remaining tbsp olive oil, and salt and pepper in a large baking bowl to make a sauce. Add tomatoes and feta and gently turn to coat the other side.

Make pasta al dente. Pour into a large colander, drain, then rinse with a little cold water until just warm. Drain well and add to tomato mixture form, mix.

Pile orzo on two plates and sprinkle with pine nuts.
