For the oven vegetables, peel and quarter the potatoes. Cut the peppers into strips and the melanzani into thick slices. Blanch potatoes in salted water for 10 minutes and peppers and melanzani for 3 minutes each.

Wash mushrooms, quarter large tomatoes.

Mix olive oil, herbs and pepper. Marinate vegetables with vinaigrette. Bake in preheated oven at 200 degrees Celsius for about 15-20 minutes, turning once in between.

Crush the garlic cloves and mix with the juice of one lemon. Season with salt, pepper and chopped parsley and serve the sauce as a dip with the oven vegetables.
