Overbaked Vegetable Bananas

Peel the vegetable bananas, cut in half lengthwise.

In a wide frying pan, bring water to a boil. Add a little salt and the juice of one lemon and pour in the bananas. Simmer on low heat for 15-20 minutes.

Chop the peanuts in a cutter. Melt butter or peanut butter on low heat and mix with sambal oelek.

Brush a baking tray with the oil.

Lift the bananas out of the water and dry them with kitchen roll.

Place them in the baking tray and brush with the seasoned butter. Sprinkle with the peanuts and press them lightly with the palm of your hand until smooth.

Place in the middle of the 200 °C hot oven and bake for 8-10 minutes.

Goes well with curry dishes of tofu, fish, meat, vegetables or possibly with lamb, chicken, roast pork with lots of sauce.
