A bean recipe for every taste:

You put the oil with a little bit of salt in -the paella frying pan.

When the oil is hot, add the meat and fry it until it is brown. Then add the tomatoes and garlic and stir. When the tomato and garlic are a little browned (be careful not to burn them!), add the water up to the level of the rivets that hold the handles of the paella pan. Then add the vegetables and salt and cook for 35 minutes or a little longer, until the meat and vegetables are cooked.

-Then add the evaporated water repeatedly, and when it starts to make, sprinkle evenly the long grain rice in the paella, season with salt and let it do for 15 minutes. When the liquid is gone, turn down the flame and let it cook a little more until it is done.

Check if the long grain rice was a little hard or soft, next time you will have to use a little more or less water.
