Instructions:

Cut beef into finger-thick slices.

Preheat the oven to 200 degrees.

Prepare a light roux with butter (I) and flour, pour in the beef broth, add the whipped cream and cook on a low flame for 10 minutes. Then fold in the cheese, season with salt and pepper and add seasoning.

Dip the slices of meat one by one in the sauce and place them like a roof tile in a buttered ovenproof dish. Pour the remaining sauce over them, sprinkle breadcrumbs on top and butter flakes (Ii).

Bake in the oven at 200 degrees for about 25 minutes.

Serve in the mold.
