Instructions:

To make the dough for the Parmesan Thyme Cookies, place all ingredients in a food processor, mix together and let rest briefly.

Roll out on a floured work surface to about 1/2 cm thick and cut out with a small round ring.

Cut the mozzarella into small cubes, quarter the cherry tomatoes, top the cookies with them and bake at 160 degrees for about 15 minutes.

Decorate with fresh basil and serve the parmesan-thyme cookies while still warm.
