For the pasta salad with honey-thyme mayonnaise, cook the croissants in enough salted water until al dente. Drain and rinse the croissants in cold water. Peel and chop the garlic cloves and red onion.
Clean and chop the remaining vegetables and mix the mayonnaise with mustard, honey and thyme. If necessary, season with salt and pepper and add the croissants, vegetables and meat sausage cubes.
Mix everything well and leave in the refrigerator for about 1 hour. Garnish the pasta salad with honey-thyme mayonnaise with sprouts and chopped parsley just before serving.
