Pasta dishes are just always delicious!

Peel beet, halve and cut into thin slices. Heat butter in a frying pan and sauté shallots over medium heat. After 1 minute, add beets and season heartily with pepper. Pour beef broth and reduce a little. Cook pasta according to package directions until al dente.

In the meantime, rinse, dry and chop dill or chives. Drain the noodles, add to the beet form, simmer together on low heat for 1 minute and season with vinegar and perhaps a tiny bit of salt.

Arrange evenly on plates and sprinkle with freshly grated horseradish, dill or chives. If desired, serve with sour cream.
